5 Ingredient Healthy Blueberry Nut Cookies

Late night girl talk almost always leads to baking . And that was how this healthy blueberry nut cookie came to be. Two hungry friends, creativity and a love for baking. This one’s for you Jazz! Thanks for aiding in the creation of this recipe. Let’s get started.



1 Cup of Oat Flour

5 Pitted Dates

1 Ripe Banana

1 Tbsp Coconut Sugar (optional)

Handful of Fresh Blueberries

Handful of Almonds (or nuts of your choice.)

Baking Details:

Pre heat the oven to 350 degrees

Leave cookies in the oven for 15 minutes



First preheat the oven to 350 degrees. Then blend dry oats for about 20 seconds until it turns into oat flour. Then add in the ripe banana, coconut sugar (optional) and 5 pitted dates and blend until you get a doughy texture. Next cut the fresh blueberries into halves and crush the almonds on a cutting board. Once that is done, grease  your hands with olive oil so can handle the dough more easily. Now take a part of the dough (enough for a medium size cookie) and roll the mixture into a ball. Then take the balled up dough and roll it around in the chopped blueberries and nuts. After I do this, I roll the dough with the add-ins into a ball again. This is just so you can disperse the almonds and blueberries evenly throughout the dough. From there smash the     dough with the add ins into a cookie shape (simply because they bake how they’re shape.) Finally you are going to place the raw cookie on a greased pan. Do this method 5 more times, making 6 medium size cookies, and place it in the oven for 15 minutes. That’s it! Wahlah! Time to eat.
