Carrot & Apple-Nut Muffins

Hey guys, this will be quick. Say hello to my new carrot and apple-nut muffin recipe. Make, share and be healthy. Thank you.



1 chopped apple   1 cup of grated carrots   3/4 of oat flour or almond flour

tsp of cinnamon   tsp of baking soda    1/4 tsp sea salt

1/4 applesauce   1/4 cup of honey or agave nectar (for vegans)

handful of chopped nuts ( I used mostly walnuts and a few almonds)

3 little slices of banana ( not sure if its necessary though)


Pre-heat oven to 350 degrees. Sift oat flour into a mixing bowl then add the baking soda and cinnamon. Stir that mix a bit, then add the applesauce, honey and 3 banana slices. Use an electrical beater to make the mixture smooth. Then add the grated carrots and beat the mixture lightly. Next add the chopped apples and nuts and whip the mixture around with a spoon to spread the apples and nuts evenly.

Oil your muffin pan with olive oil (or any healthy oil, coconut, flaxseed..etc.) Then scoop the mixture evenly throughout the muffin sheet. You can make them pretty by topping them with sliced apples, nuts or bananas if you want to be fancy. Bake them for 20-25 minute, let it sit for 7 minutes, then eat!
