Yo. I just realized I don’t like my falafel wrapped with pita bread. It’s too much bread competing with the taste of my beloved falafel. So after I made the mistake twice this week to make a falafel wrap (and was totally not satisfied), I decided to make a falafel salad. The funny thing is I absolutely suck at making salads. I just can’t seem to put them together right. But today the salad gods open their gates of heaven and laid upon me the knowledge to make a really good salad! I mean I didn’t think it would make the blog. So I’m going to write it down before I forget. Because well, this is obviously a miracle.
WARNING: I basically eyed the measurements of this recipe so add a lot of what you like and a little of what you don’t and you should be fine. I did however put only a little of dressing on my salad since I had hummus on the side.
Chopped Grape Tomatoes
Chopped Red Onion
3 to 4 Falafel (I bought the Veggie Patch Classic Falafel)
Fat Free Balsamic Vinaigrette
Hummus on the side (You can probably add it to the salad, but I like to dip my falafel into the hummus and then smash the falafel around the salad and eat. That way I get a little hummus, falafel and all the salad mixings in one bite.)
Sometimes you just need a good ole salad to keep you refreshed throughout the week. I recommend this one! Enjoy.
