Vegan Power Balls – 3 Ingredient Recipe

Easter just passed and you know that meant desserts galore and deep down country soul food! However, I was good guys. I told myself that I will no longer let holidays or special events be an excuse for eating bad. So I made my own healthy AND vegan meal, with dessert to go with!!! And I’m feeling guilt free and satisfied. Truthfully I did go a bit overboard eating the dessert portion, but aye at least I was eating REAL food… no refined sugars, no dairy, unprocessed.  So about this dessert, I shall call it Vegan Power Balls. I made a chocolate, peanut butter and a chocolate peanut butter version of my Vegan Power Balls. And I couldn’t tell you which one I liked better, because they were alllll delish! Seriously. Delicious.  Now let me get to the recipe and instructions. LET’S GO!

Ingredients:

Will make about 11 Vegan Power Balls

1 box of 8 oz  Natural Delights Pitted Medjool Dates (or any other brand you may like.)

2 to 3 tbsp. Cocoa, Cacao or Carob Powder

2 to 3 tbsp. Powdered Peanut Butter

Handful of Cashews

Optional:

Chocolate Chips

Shredded Coconut

Chia Seeds

… and any other topping you might like.

 

Instructions:

To make the vegan power balls, pit the dates and put all 8 oz into a blender (I used a nutribullet). Then add 2 to 3 tablespoons of whatever powder you prefer (cocoa, cacao, carob, pb2 etc.) and a handful of cashews. Then blend!!!! Once the mixture is evenly distributed grease your hands with coconut oil and take about 2 tablespoons out of the mixture and roll the mixture into a ball. (You may need to re-apply coconut oil to your hands every once in a while so it can be easier to roll the dough.) Then you are going to place the ball on parchment paper. Repeat this until all balls are rolled and placed on the parchment paper.

Next put the balls into the refrigerator for about 30 minutes. While the balls are firming in the refrigerator go ahead and prepare your toppings. I crushed some chocolate chips and cashews and rolled the balls around the topping to make a coat. Then I put the coated balls into the freezer for about an hour. Then EAT!!! They are sooo good ya’ll. Try, try, try and tell me what you think!
