Vegan Red Beans and Rice (Quinoa)

These days it cold and groggy outside and most of the time I just want to curl up with a warm bowl of red beans and rice. However, I didn’t know how to make it. I tried to create a bowl myself, you know, a little spice here a little spice there, and although it was pretty good, it didn’t get the job done. It wasn’t blog worthy, if you know what I mean. So I had to turn to an expert, my boyfriend’s mom, Ms. Marlene. Back in the day, she used to make us red beans and rice all of the time. It was delish! However, things took a turn when I stopped eating meat. My beloved red beans and rice was made with pork… So there was no more red beans and rice for me. Yes, it was a tragic time… Well that is, until my craving overwhelmed me. So I simply asked Ms. Marlene to teach me her ways VEGGIE STYLE. And oh, am I happy she did. Check out the recipe below.


1/4 Red Beans of a 1lb Bag1

1 Green Pepper Chopped

2 Celery Stalks Chopped

1/3 Onion Chopped

1/2 Tomato Chopped

2 tbsp of tomato sauce

1 tsp Oregano

1 tsp Thyme

1 tsp Salt

1 tbsp Creole Seasoning

1 tbsp Cumin

1 tbsp Minced Garlic

Quinoa or Brown Rice


Put all of the above ingredients except the quinoa or brown rice into a small crock pot. When all of the ingredients are added in, pour water into the  crock pot until  the water is about an inch above the rest of the ingredients. Then, put the crock pot top on and set the crock pot to high. Let the ingredients cook for about 5 hours. You can leave it on overnight, while you’re at work or running errands. Every now and then, stir up the ingredients, give it a little taste test and see if you need to add any more spices. Feel free to put the crock pot setting on low if you feel it’s too hot.

Then you are going to cook your quinoa or brown rice into a rice cooker. You simply place a cup of rice or quinoa into the rice cooker and add in 2 cups of water and let it cook until the rice or quinoa has puffed and the water has evaporated.

When both your beans and grains are finished cooking you can either do one of two things. One, you can add you grains into the crock pot and stir or two, you can put you grains into the bowl and add the beans on top. Either way… It’s delish.

Sometimes I leave the grains out altogether and just eat the red beans with a side of jalapeno cornbread. Mmmmm mmm! Now that’s good eatin’! Please try this recipe out and let me know how you like it. Again thanks Momma Marlene for the slammin recipe. 

Sidenote: To make an even bigger batch quadruple the recipe with the entire 1lb bag of beans. You’re going to need a bigger crockpot.
